The head trained vines are exposed to the north, at an altitude of about 600 meters above sea level which favors the optimal evolution of the aromatic profile, while the soils have a heterogeneous composition, being characterized by stony alluvial soils in the lower part and sandy, rich of lava blocks and volcaniclastic deposits in the upper part. Here we cultivate the Carricante which, vinified alone, becomes our Etna Bianco DOC.
Harvest takes place manually, with a selection of the best clusters first in the vineyard and then again in the cellar, where they arrive in a very short time to avoid oxidation and pre-fermentation processes.
After the destemming and a light pressing, a cold maceration on the skins takes place for a few hours, followed by the cold static decantation of the must and the alcoholic fermentation in steel at a controlled temperature which, once finished, ends with the aging in steel on the lees with bâtonnage for at least 6 months. The wine is then bottled in April.
It shows a straw yellow color with light golden reflections. To the nose it expresses delicate and elegant aromas characterized by citrus notes, green apple and white pulp summer fruit to finish on floral tones reminiscent of acacia and Mediterranean aromatic herbs. Balanced and very fresh wine, to the palate it boasts a marked volcanic aftertaste.
