As training system, we have chosen the sapling pruning which provides that all the cultivation operations are carried out manually, this is certainly more onerous in terms of costs and times but allows advantages not reachable with mechanization.
First of all, our harvesters cut the bunches of grapes one by one, so selecting them already during the harvest. This aspect is very important for the success of a wine. In fact, they collect them in specific small containers and transport them without heaping them and therefore without creating detriment to the bunches themselves, delivering them to the cellar as soon as possible to avoid oxidative and pre-fermentation processes.
